What is the SPLASH process? It's a fancy word for a specific type of washed process created by CCD. The coffee undergoes a depulping and short 20 hour aerobic fermentation while retaining the mucilage. A special blend of lactic acid bacteria is added to further enhance the richness and complexity of the coffee. The result is a classic and elegant profile where we aim to highlight the terroir of Panama’s volcanic soil as well as the characteristics of the Geisha variety.
